4 cups fresh basil leaves
1/2 cup pistachios roasted, shelled
1/2 cup parmesan cheese grated or shredded
3 cloves garlic
1/8 teaspoon red pepper flakes
1 tablespoon lemon juice
1/2 cup extra virgin olive oil - more if needed
salt & pepper (to taste)
- In a blender or food processor to puree, add the basil, pistachios, parmesan, garlic cloves, and red pepper flakes. Initially blend then gradually add in the extra virgin olive oil until a smooth paste is formed.
- Transfer to a bowl and stir with the lemon juice.
